Mozzarella, strawberry and pomegranate salad

This quick and healthy salad is a great easy lunch or light appetizer. The soft mozzarella provides a nice contrast to the tangy pomegranate seeds. The olive oil and sweetness of pomegranate vinegar are the perfect combination to finish off this original and delicious salad.
Ingredients

- 4 tbsp Italian olive oil
- 4 tbsp pomegranate vinegar sweetness
- Camargue salt
- Pepper
At the market
- 4 cups mixed salad, rinsed and dried
- 16 strawberries, quartered
- 1 melon, cut into thin slices or balls
- 24 small mozzarella balls
- 1.5 cups pomegranate seeds
- Fresh mint
Execution
Divide and arrange the mixed salad on each plate.
Add the strawberries, melon and mozzarella.
Season with olive oil and pomegranate vinegar. Add fresh mint and pomegranate seeds.
Sprinkle with salt and pepper to taste. Serve and enjoy!
