Oleum Hispania is a Spanish anniversary oil, a beautiful, emerald-green olive oil pressed from rare Pajarera olives, which surprise with their sweetness. The Siles Lopez family has been producing extra virgin olive oil for over 20 years in the heart of the southeastern province of Córdoba in the Sierras Subbéticas mountains. The property covers 140 hectares of olive groves, which are a mix of old trees over 50 years old and younger trees.
The olives are crushed and cold-pressed, then the oil is filtered and stored in stainless steel tanks at controlled temperature and nitrogen levels.
The unique terroir, microclimate, mountainous terrain, and expertise of the farmers result in exceptional oils that are recognized in all international competitions.
All our O&CO extra virgin olive oils are single-estate olive oils with 100% traceability. Producers must meet our strict quality requirements, and the olive oils are pressed within 24 hours of harvest. Only the best extra virgin olive oils make it into our annual selection!
