Chef Enzo Petté a great black olive classic that pays homage to the famous tapenade and has been reworked by Chef Petté: crushed black olives mixed with sweet notes of figs. A little IGP Provence honey is added for a sweet result. This creation, an olive paste with fig inspired by tapenade, transformed into an olivada, is spicy and slightly sweet: Ideal for alternating flavors and tastes, such as an aperitif or cooking! Made in Provence with simple ingredients.

Taste and culinary experience

Spread on toast as an aperitif, use with cheeses (Camembert, Comté, Ossau Iraty) or in sauces for osso-buco, rabbit or guinea fowl.

Ingredients: 64% black olives, 14% dried figs (dried figs, rice flour), extra virgin olive oil, concentrated lemon juice, balsamic vinegar (wine vinegar, concentrated cooked grape must, caramel, sulphites), honey, anchovies (anchovies, olive oil, wine vinegar, sulphites).

Special storage conditions: Store away from heat and light.

Handcrafted and know-how

Oliviers & co., faithful to its tradition and know-how in culinary creation, wanted to highlight the fig olive paste by asking great chefs to reinterpret their recipes. The result is an original collection made in Provence with simple products and especially olives! Cooking in a cauldron reveals the authentic character of the olives, which are then cooked around key ingredients: Basil, tomatoes, lemon, figs, pistachios... The most basic ingredients often reveal the genius of great chefs!
