Marinated mackerel with a sour touch

A delicious recipe for marinated mackerel with olive oil and freshly squeezed organic lemon.

Ingredients

  • Olive oil and freshly squeezed organic lemon
  • 3 tablespoons sweet pomegranate vinegar
  • Salt and herbs for fish

On the market

  • 8 mackerel fillets
  • 1 clove of garlic
  • Fresh ginger
  • 1/2 bunch of fresh coriander

Preparation

Pour pomegranate vinegar into a pot, add crushed garlic, half of the chopped coriander and grated ginger, heat over low heat. Add 8 tablespoons of olive oil with lemon and 1 teaspoon of salt and herbs.

Place the rinsed and dried mackerel fillets on a plate, skin side up, and pour the marinade over them. Cover with cling film and leave to marinate for 45 minutes.

Drain the mackerel fillets and place them under the grill, skin side up, grill for 5 minutes and serve with lightly grilled zucchini tagliatelle.

Drizzle with lemon oil, season with salt and pepper. Sprinkle with the remaining chopped coriander and serve.
