MEDITERRANEAN POTATO SALAD

ABOUT THE RECIPE

Potato salad meets egg salad in this Mediterranean take on the classic potato salad, perfect for a picnic or group meal.

INGREDIENTS

From Oliviers&Co
2 tablespoons WHITE BASIL VINEGAR FROM MODENA
6 tablespoons Italian olive oil
Camargue salt
Pepper

On the market
1 medium-sized romaine lettuce
450g Potatoes for salads
4 hard-boiled eggs
Mayonnaise

REALIZATION

Peel the potatoes and cook them in a large pot of boiling salted water until tender. Drain and set aside.

Peel and roughly chop the boiled eggs. Wash and dry the lettuce and tear the leaves into large pieces. Cut the potatoes into large slices.

Layer the lettuce, potato slices, and eggs in a large bowl.

In a small bowl, mix together the mayonnaise, olive oil, and white basil vinegar of Modena .

Toss lightly with the sauce until all ingredients are coated. Sprinkle with salt and pepper to taste.

Serve warm or at room temperature.
