Mozzarella, strawberry and pomegranate salad

This quick and healthy salad is great for an easy lunch or as a light appetizer. The soft mozzarella creates a beautiful contrast with the tart pomegranates. The olive oil and sweetness of the pomegranate vinegar are the perfect combination to complete this original and tasty salad.
Ingredients

- 4 tablespoons Italian olive oil
- 4 tablespoons sweet pomegranate vinegar
- Salt from Camargue
- Pepper
On the market
- 4 cups mixed lettuce, rinsed and dried
- 16 strawberries, cut into quarters
- 1 watermelon, cut into thin slices or cubes
- 24 small mozzarella balls
- 1.5 cups pomegranate seeds
- Fresh mint
Preparation
Divide and place the mixed salad on each plate.
Add strawberries, watermelon and mozzarella.
Season with olive oil and pomegranate vinegar. Add fresh mint and pomegranates.
Sprinkle with salt and pepper to taste. Serve and enjoy!
