Cod or hake rillette with passion fruit

With this recipe you can easily make your own fish rillettes from white fish, such as cod or haddock. They taste great and take only a few minutes to prepare. The rillettes can be prepared in advance and kept in the fridge until you are ready to serve.
The delicate taste of the fish is complemented by passion fruit and the flavor notes are enhanced with our gourmet vinegar with passion fruit and wild French thyme. The combination is fantastic!
Serve seafood rillettes as a delicious appetizer or as a lovely addition to lunch.
Tip! Ask your local fisherman what's in season. Cod and flounder are delicious in this recipe, but you can use other fine white fish.

Ingredients

1 tablespoon of passion fruit and thyme vinegar

300 g cleaned cod or haddock
125 g natural cream cheese
2 shallots
1 handful chopped coriander
2 teaspoons freshly grated ginger
1 passion fruit

Procedure
Preheat the oven to 160°C. Season the fish with salt and pepper, drizzle with olive oil and bake for 15 minutes or until the fish is soft and falling apart. Let the fish cool.
In a bowl, combine the chopped shallot, chopped cilantro, grated ginger, passion fruit vinegar, and cream cheese.
Add the cooled fish, passion fruit pulp and a little olive oil and mash everything with a fork. Season with a little sea salt and freshly ground pepper.
Let cool in the refrigerator and serve with some well-toasted bread.
