LAMB KEFTA SKEWERS WITH YOGURT SAUCE

A recipe for marinated lamb, lightly spiced, with oriental flavors.
Ingredients

2 teaspoons Zaatar mixture
Salt and herb mixture for meat
Olive oil and lemon BIO
Pepper
On the market
700 g lamb, minced
1 onion
1 clove of garlic
2 sprigs flat parsley
2 sprigs of mint
2 pinches ground cinnamon
2 Greek yogurts
Preparation
Turn on the plancha (or grill) and soak the wooden skewers in cold water (so they don't burn while cooking).
In a bowl, mix the yogurts with 1 teaspoon of the Zaatar mixture and 1 tablespoon of the olive oil with lemon and refrigerate.
Grate the onion, finely chop the garlic and chop the herbs. Mix them in the bowl with the meat. Add the cinnamon, the rest of the Zaatar mixture and 1 tablespoon of the olive oil with lemon, sprinkle with the salt and herb mixture and season with pepper. Mix everything well.
Divide the mixture into 12 parts and with moistened hands, shape small rolls around wooden skewers, pressing them well to hold them together.
Cook the skewers on a griddle for 6 to 8 minutes on each side, turning them several times.
Serve with roasted vegetables drizzled with olive oil and lemon and a yogurt sauce.
