Zucchini fritters with feta

Crispy zucchini fritters with a hint of mint and feta, served with Greek yogurt with za'atar… exactly the kind of recipe you try once and then make all summer long.

10 Thyme Almonds
Freshly squeezed olives and mint
2 teaspoons za'atar
From the market:
2 beautiful zucchinis
180 g feta
5 sprigs of dill
12 mint leaves
180 g flour
1 teaspoon baking powder
1 egg
Oil for frying
300 g Greek yogurt
Salt, pepper
Instructions
Wash and grate the zucchinis (on a coarse grater). Lightly salt and pepper, and let sit for 10 minutes. Squeeze out excess water by hand.
Cut the feta into pieces, finely chop the dill and mint, and add to the zucchinis.
Add the mint olive oil, flour, baking powder, egg, and ½ teaspoon za'atar. Mix; the batter should remain sticky.
In a pan, heat about 3 cm of frying oil to 180°C. Take a spoonful of batter with a ladle and use another spoon to place it in the hot oil. Fry in batches, turning until golden brown. Drain on paper towels.
To serve, mix the yogurt with 2 pinches of pepper. Serve in a bowl, sprinkled with za'atar and drizzled with mint olive oil. The fritters can be prepared in advance and reheated for 10 minutes in the oven at 210°C.
