Ingredients

From Oliviers & Co

Olive oil with fresh lemon

Hibiscus and Bergamot Vinegar

Fleur de Sel 

Salt and Herb Blend for Fish

From the market:

2 large, very fresh sea bream (or 600 to 700 g sea bream fillets, skinless and boneless)
Zest of one organic lemon 

Radish

A few shiso leaves (perilla)

Method

Slice the sea bream fillets (or any other white fish of your choice) very thinly (slicing will be easier if you place them in the freezer for 20 to 30 minutes).

Arrange the slices in a single layer on a large serving plate.

Slice the radishes thinly and arrange them nicely on the fish slices.

Drizzle with a little lemon olive oil, then add the hibiscus and bergamot vinegar.

Add sea salt, pepper, herbs, and lemon zest, if using.

Let marinate for a maximum of 5 to 10 minutes before serving to preserve the fish's texture.
