RAW MATERIALS
BROWNIES
● 150 g butter
● 200 g dark chocolate
● 5 eggs
● 100 g brown sugar
● 280 g granulated sugar (or 360 g if you don't use brown sugar)
● 2 tablespoons strong coffee
● 70 g plain flour
● 30 g cocoa powder
● ½ teaspoon baking powder
● A pinch of fleur de sel from Oliviers & Co .
FOR SERVING
● 600 g of good quality vanilla ice cream ( Crème de la crème is great)
● Extra virgin olive oil - we used summer olive oil from Oliviers & Co.
● a pinch of fleur de sel from Oliviers & Co
● Edible flowers (optional)
INSTRUCTIONS
1. Preheat the oven to 175°C (fan).
2. In a heatproof bowl over a pot of simmering water (or over very low heat), melt the butter and chocolate.
3. In a separate bowl, beat the eggs, brown sugar, and granulated sugar with a whisk or electric mixer until the mixture is light and fluffy.
4. Pour in the melted butter-chocolate mixture and stir vigorously in the middle with a spatula to emulsify. Stir in the coffee in the same way.
5. Sift together the flour, cocoa powder, baking powder and fleur de sel. Mix everything together until you have a smooth dough.
6. Pour the batter into a parchment-lined pan or baking dish (we used a 21x33 cm pan). The size may vary - just watch the baking time.
7. Bake at 175°C for 30-45 minutes. Start checking after 30 minutes. Insert a knife into the center - it should come out with moist crumbs, but not raw dough.
8. Remove from oven and let brownies cool completely.
9. Serve the brownie slices with a scoop of vanilla ice cream, drizzled with extra virgin olive oil and lightly sprinkled with fleur de sel. Enjoy! Brownies with vanilla ice cream

HOW TO MAKE QUENELLE
Forming ice cream into a quenelle shape can be tricky, but if the ice cream is properly tempered, it's easier than it looks. (Tip: find a video on this technique if needed.)

BAKING TIME Your baking dish may vary in size and shape - baking time is important. The higher the dough is in the baking dish, the longer it will need to bake. Aim for a dough that is 1-1.5 cm high. Keep in mind that the cake will rise slightly during baking.
GLUTEN-FREE You can easily make this recipe gluten-free by using gluten-free flour, rice flour, or almond flour. Using rice or almond flour will make the brownie even fluffier - and delicious!
LACTOSE-FREE To make this dessert lactose-free, just use butter, chocolate, and lactose-free ice cream.
