Affiorato / Olio Novello – “that which comes to the surface” - fresh olive oil

Affiorato, which means “that which rises to the surface” in Italian, takes its name from a traditional production method that Italian olive growers have used for centuries. The method is based on the fact that olive oil is lighter than water and therefore rises to the surface of the barrel after the fresh olives have been pressed into juice. This way, the coveted golden drops can be obtained in the bottles. Today, the ancient Affiorato technique is combined with modern knowledge and techniques, and “Affiorato” is always the first harvest of extra virgin olive oil of the year at Oliviers & Co.

The Geraci family – fourth generation of olive oil producers

This year, the beautiful, greenish olive oil comes from the Geraci family from Sicily, which has been producing excellent olive oils for four generations. The Geracis have been producing the best “Affiorato” for 6 years – and this year they succeeded again and were selected for the O&CO range.

The Geraci family has developed a unique selection process over generations that ensures that only the best healthy Nocellara del Belice olives are selected and pressed to produce Affiorato. The tender green olives are hand-harvested in October, the beginning of the harvest season, and the result is a delicious, creamy olive oil with a grassy flavor and notes of green apples, tomato leaves and fresh almonds.
