Marinated tangy mackerel

A delicious recipe for mackerel marinated in olive oil & freshly squeezed organic lemon.
Ingredients

- Organic fresh squeezed olive oil & lemon
- 3 tbsp pomegranate vinegar sweetness
- Salt & herbs for fish
At the market
- 8 mackerel fillets
- 1 clove of garlic
- Fresh ginger
- 1/2 bunch of fresh coriander
Execution
Pour the pomegranate vinegar into a saucepan with the crushed garlic, half of the chopped coriander and the grated ginger, warm over low heat. Add 8 tbsp of lemon oil and 1 tsp of salt & herbs.
In a dish, place the rinsed and dried mackerel fillets, skin side up, then pour the marinade over them. Cover with cling film and leave to marinate for 45 minutes.
Place the drained mackerel fillets under the grill skin side down, grill for 5 minutes and serve with lightly grilled zucchini tagliatelle.
Drizzle with lemon oil, salt and pepper. Sprinkle with the remaining chopped coriander and serve.
