Kefta-style lamb skewers with yogurt sauce

A recipe based on marinated lamb, lightly spiced, with oriental flavors.
Ingredients

- 2 tsp Zaatar mix
- Salt & Herb Mix for Meat
- Organic olive & lemon oil
- Pepper
At the market
- 700g lamb, minced
- 1 onion
- 1 clove of garlic
- 2 sprigs of flat parsley
- 2 sprigs of mint
- 2 pinches of ground cinnamon
- 2 Greek yogurts
Execution
Light the plancha (or grill) and soak the wooden skewers in cold water (to prevent them from burning during cooking).
In a bowl, mix the yogurts with 1 tsp of Zaatar mix and 1 tbsp of olive oil & lemon and set aside in the fridge.
Grate the onion, finely chop the garlic and chop the herbs. Mix them in a salad bowl with the meat. Add the cinnamon, the rest of the Zaatar mixture and 1 tbsp of olive oil & lemon, sprinkle with salt & herbs mixture and pepper. Mix everything well.
Divide the mixture into 12 parts and with damp hands, roll the meat into small sausages around the wooden skewers, pressing well so that it sticks.
Cook the skewers on the griddle on each side for 6 to 8 minutes, turning them several times.
Serve with roasted vegetables drizzled with olive oil & lemon and the yogurt sauce.
